Sweet N Sour Chicken (or Pork) by Elisa
Lazy Way:
Cut up chicken/pork into bite sized pieces and saute along with chopped bell pepper, carrot, and onion (or whatever veggies you want to throw in). Add in some canned pineapple and sauce (as follows), warm up and serve over rice.
Sauce:
1/4 c sugar
2 T. ketchup
2 T. soy sauce
1/4 t. salt
1/2 c. reserved pineapple juice (from can of pineapple)
1/4 c. vinegar
1 T. cornstarch mixed in a few splashes of water
Mix all ingredients except last on stove until bubbly a bit then add cornstarch mixture and simmer till thickened.
Pain in the Butt Way (but really quite tasty):
Marinate meat in 3 t. soy sauce and pinch of cornstarch for 20 minutes. Then coat in batter of 1/3 c. flour, 1/3 c. cornstarch, 1 beaten egg white, 1 T. oil, and enough water to make it thick (in the ballpark of 1/3 c.). The batter shouldn't be runny but should fall off a spoon. Fry battered meat in an inch or so of vegetable oil until golden brown of deep fry. Drain on paper towels. Add chopped veggies to sauce while its cooking instead of sauteing them.
