Overnight Stuffed French Toast



Overnight Stuffed French Toast by Divinity

6 oz cream cheese, softened

½ cup orange marmalade or apricot preserves

2 teaspoons ground ginger

1 teaspoon ground nutmeg

¼ cup chopped almonds, toasted

6 – 1 ½ inch slices of French bread

4 eggs

1 cup milk

1 teaspoon vanilla

1 recipe orange sauce

Directions:

Generously grease a 3 quart rectangle baking dish, set aside. In a small bowl beat together the cream cheese, marmalade, ginger, and nutmeg. Stir in almonds. Cut a pocket in the top of crust of each slice. Divide cream cheese mixture evenly among pockets. Place in baking dish.

In a small bowl beat together the eggs, milk and vanilla; slowly pour egg mixture over bread slices, covering all the tops. Cover and chill overnight.

Bake uncovered at 350 degrees for 30-35 minutes or until golden brown. Serve with orange sauce.

Orange Sauce

In a small saucepan stir together ½ teaspoon finely shredded orange peel, 1 ¼ cup orange juice, 2 tablespoons honey, and 4 teaspoons cornstarch. Cook and stir over medium heat until thickened.
